Banana Cake

Three 9" Layers
INGREDIENTS:
2 1/2 c. flour
1/2 t. salt
1 t. baking powder
1/2 c. shortening
1/2 t. nutmeg
1 1/2 c. sugar, 3 eggs
1 T. HOT water
1 c. banana pulp
1/4 c. sour milk or buttermilk
1/2 c. walnuts
1 t. lemon juice
3 egg whites
1 t. soda
DIRECTIONS:
Sift together flour, salt, baking powder, and nutmeg. Cream shortening and sugar. Add slightly beaten egg yolks and banana pulp and beat well. Add sour milk and nuts. Add sifted dry ingredients and then the lemon juice. Fold in well - beaten egg whites. Dissolve soda in HOT water and add to mixture. Pour into 3 greased and floured 9" pans and bake for 25 to 30 minutes at 350*. Top with banana icing.
