Date Pecan Candy Roll2 c. sugar 1/2 c. light cream 1/3 c. dark corn syrup 2 T. butter/margarine 1/2 lb. dates-cut- up 4 c. pecans - chopped DIRECTIONS: Combine sugar, cream, syrup and butter in saucepan. Boil to 234* - 238* or until a drop in cold water forms soft ball. Remove from heat; add dates. Beat until it cools and thickens. Add pecans turn mixture out onto a damp towel. Roll into a log. Cool; cut into 6 pieces. Re-roll each piece into logs - about 1" in diameter. Cut each log into pieces about 1/4" in size.
